Shaved Brussels Sprouts Salad

I’ve never been a big fan of Brussels sprouts unless they are raw and chopped.  I use a mandolin to shave them in this salad, but you can use a knife and slice as thinly as possible.  The pomegranate molasses in the dressing adds a nice flavor, but if you don’t have it you can substitute balsamic vinegar.

Main ingredients:
Serves 8-10
3 pounds raw Brussels sprouts, finely shredded on a mandolin or in a food processor
2 stalks of celery, sliced very thinly
2 shallots, sliced very thinly
2 green onions, chopped
2 tbsp. toasted pine nuts

Dressing:
2 tbsp. white wine vinegar
2 tbsp. pomegranate molasses
1 tbsp. honey
1 tbsp. minced shallot
1 garlic clove, minced
1/2 cup olive oil
1 1/2 tsp. finely chopped fresh oregano
salt and pepper

Method:
Combine all salad ingredients in a large bowl, and sprinkle with 1/2 tsp. of salt.  In a small bowl, combine dressing ingredients and whisk until combined, adding salt and pepper, to taste.   Pour dressing over salad and toss.  Serve immediately
