Smoked Dal


Main ingredients:
1 1/2 cups Urad Dal (found in Indian grocery store)
14 ounce can chopped tomatoes, with juice
1 tablespoon minced ginger
4 garlic cloves, minced
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. garam masala powder
1/2 tsp. red chile powder
1 stick butter (or ghee)
1/3 cup whole milk
1 teaspoon salt
5 cups water

Soak lentils in bowl of water with 2 tablespoons of salt overnight.  Drain and add lentils to a deep pan, adding 6 cups of water.  Simmer until tender.  This could take up to two hours, but you can use a pressure cooker to make it much faster.  

Meanwhile, puree the tomatoes, ginger and garlic to a paste, either using a mortar and pestle or food processor.  Add cumin, coriander, garam masala, and red chile powder to combine.  When lentils are tender, add the pureed mixture and stir.  Add butter, milk, salt, and 1 or 2 more cups of water.  Simmer in pan for one hour.  Taste to determine if more salt or spices need to be added.  Finally, to make this dish really special, place pan, uncovered into a smoker on the rack with indirect heat.  Add wood chips to the charcoal (if using charcoal) and close smoker lid.  Smoke for at least 3 hours, stirring every hour and adding more water if necessary.
