Muesli with Flaxseed

Here’s a really easy and healthy breakfast that originated in Switzerland.  It’s raw oats mixed with grains and spices, then soaked overnight in the fridge.  There’s no cooking, and when you eat it the next morning with some nuts, fruit, or maple syrup you’ll be so happy because there was hardly any work at all, and it is so good! It’s perfect for kids before school or overnight guests that expect a great breakfast.  This is it!

Ingredients (Serves 6):

2 cups oats

1/3 cup wheat germ

1/3 cup ground flaxseed

1/4 cup maple syrup

1/2 tsp. ground cinnamon

1/2 tsp. vanilla extract

3 cups low-fat milk

3 tbsp. sliced almonds, toasted

3 tbsp. chopped pecans, toasted


Method: Combine oats, wheat germ, flaxseed, maple syrup, cinnamon, milk and vanilla in a large bowl, stirring to combine.  Cover and chill 3 hours or overnight.

To serve, spoon mixture into 6 bowls and top with nuts.  Drizzle with maple syrup, if desired.

note:  I like to add fruit, such as bananas, strawberries, or blueberries.
