Peach Semi Freddo
Semi Freddo is a dessert that is “semi-frozen”. It can be prepared in individual dessert cups or the traditional way, in a loaf pan. I love using fresh peaches in the summertime, but you can make this any time of year using frozen fruit
1/2 cup sugar
2 egg yolks
8 ounces cold creme fraiche
8 ounces cold heavy cream
1/4 tsp. almond extract
4 ripe peaches, chopped
1 tbsp. honey
Line a loaf pan with parchment paper, allowing to drape over sides.
In a small bowl, whisk the sugar and egg yolks until they are pale yellow and smooth. Using an electric mixer with the whisk attachment, beat the creme fraiche until soft peaks form, 2 minutes. Add the sugar and egg yolks and beat until combined. Add the cold cream and beat until stiff peaks form, 2 to 3 minutes. Fold in 1 cup of chopped peaches and almond extact; transfer into the loaf pan.
Smooth the top and cover with plastic wrap. Place in freezer and freeze at least 4 hours. Meanwhile, in a small saucepan over medium high heat, cook the remaining chopped peaches with 1 tablespoon of honey until peaches are soft. Allow to cool.
To serve, dip frozen loaf pan into a bowl of warm water for 30 seconds. Invert over a platter and remove parchment paper. Slice into 1” slices and serve with peaches.
