Spicy Maple Wings
Chicken wings are one of the easiest things to make for a meal or a snack. These are spicy and sweet, and virtually mess-free because they’re baked in the oven on foil. You can make the marinade days before you want to roast them, and whip them together in just a few minutes.
Ingredients (serves 4-6):
2 tablespoons of chipotles in adobo sauce
1/4 cup brown sugar
1/4 cup maple syrup
2 cloves garlic, chopped
1/3 cup apple cider vinegar
1 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1 1/2 pounds chicken wings and/or drumettes
Method: Preheat oven to 400 degrees. In a food processor, put the chipotles, brown sugar, maple syrup, garlic, apple cider vinegar, salt and pepper. Process and pour into a bowl with the chicken. Toss to coat, then marinate for 30 minutes. Line a baking tray with foil, and place the chicken pieces on the tray, making sure the pieces do not touch. Roast in oven for 15 minutes. Increase oven temperature to 475 degrees and cook for another 8-10 minutes, until chicken is golden. Serve with sour cream or Ranch dressing.
