Chopped Kale Salad w/ Sesame Dressing

I never became a big fan of Kale until I had a chopped kale salad in Dallas.  It was so good, I went home and created my own version with a dressing flavored with sesame oil.  The key to making this salad perfect is to really chop up that kale!


1 bunch Kale, chopped to make 6 cups (stems and tough center veins removed)
1/2 cup toasted cashews
1 orange, peeled and segmented
2 scallions, chopped
1/4 cup chopped cilantro
1/2 tsp. salt
1/4 tsp. freshly ground black pepper


1/2 cup olive oil
2 tbsp. balsamic vinegar
2 tbsp. rice vinegar
2 tbsp. soy sauce
1 tbsp. sesame oil
2 tbsp. honey
2 cloves garlic, minced
1 tbsp. fresh ginger, grated

Combine all salad ingredients in a large bowl.  To make dressing, put all ingredients in a blender and blend until smooth.  Taste to see if salt is needed.  Pour dressing over salad in small amounts, making sure to not add too much.  Toss and serve.
