THIS PORK TENDERLOIN IS PERFECT FOR YOUR HOLIDAY BARBECUE! THE LEMON DILL SAUCE WORKS BEAUTIFULLY WITH CHICKEN OR FISH TOO!

INGREDIENTS

  • 1 whole pork tenderloin, trimmed
  • salt and pepper
  • olive oil
  • Sauce:
  • ¼ cup shallots, minced
  • 1 tsp. garlic, minced
  • ½ cup dry white wine
  • juice of one lemon
  • ¼ cup chopped fresh dill
  • 1 tsp. Dijon mustard
  • ½ cup heavy cream
  • 5 tbsp. cold butter, cubed
  • salt and pepper

INSTRUCTIONS

1. Heat a grill to high.

2. Drizzle tenderloin with olive oil and sprinkle with salt and pepper. Place tenderloin on hot grill and cook until slightly pink in center.

3. Remove and tent with foil until sauce is made.

5. In a saucepan, combine the shallots, garlic, wine and lemon. Bring the liquid up to a boil and reduce by half.

6. Stir in dill and cook for 3 minutes. Whisk in the mustard and cream, continue to cook for 2 minutes.

7. Whisk in the butter a cube at a time, stirring constantly until all butter is incorporated.

8. Add salt and pepper to taste. Serve with pork.
