Kids Cooking Camp today included these oven baked chicken tenders, which were a huge hit! Half the kids said they hate mayonnaise, so they won’t like them. However, there wasn’t a piece left over!

Prep Time: 25 minutes  Cook Time: 25 minutes

INGREDIENTS

  • 1 cup low-fat mayonnaise 
  • 1/2 tsp. salt 
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. garlic powder 
  • 4 skinless, boneless chicken breasts 
  • 2 cups Panko bread crumbs

INSTRUCTIONS

1. Preheat oven to 375 degrees. In a large bowl, combine the mayonnaise, salt, pepper, and garlic powder; stir well. Cut the chicken breasts into thick strips. Drop the strips into the bowl with the mayonnaise mixture. Pour the bread crumbs onto a plate and add 1/2 tsp. salt and 1/4 tsp. black pepper; stir. Remove each piece of chicken from mayonnaise mixture and roll into bread crumbs, coating completely. Put chicken onto a baking sheet lined with foil and put into oven. Cook for 15 to 20 minutes, or until chicken is browned and cooked through.
