  • 2 (15 oz) Cans of Chickpeas, Rinsed and drained
  • 1 small red onion, finely chopped
  • 11 small sweet red pepper, finely chopped
  • 1 piece of celery, finely chopped
  • 1 cucumber, finely chopped
  • 1 clove garlic, finely chopped
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoons of chopped fresh herbs
  • Salt and Pepper
  • (You can add fresh corn, olives, capers, or any vegetables you desire)


1. Combine all the vegetables in a bowl. In a small dish, combine the vinegar, olive oil, fresh herbs, salt and pepper. Pour over the vegetables and chickpeas and combine.
