INGREDIENTS

  • 1 1/2 lbs red small potatoes 
  • 1 sweet yellow pepper, chopped and seeded
  • 1 small sweet red pepper, chopped and seeded
  • 1 clove garlic, finely chopped
  • 1 cup of basil, chopped
  • 1 cup of cilantro
  • 1 cup of parsely
  • (you can use any combination of herbs you have)
  • 1/2 cup olive oil
  • Salt and Pepper

INSTRUCTIONS

1. Put potatoes in a pot of cold water. Bring to boil and cook until potatoes are cooked through. Drain and let cool in a bowl. Add the peppers. In a medium size bowl, add the herbs, olive oil and salt and pepper. Combine and pour over the potato mixture. Serve.
